Sterlet caviar "Classic" is natural, fresh, "live" caviar. It has not been heat treated. Therefore, in comparison with pasteurized sterlet caviar of the "Standard" variety, it has a brighter, richer taste.In Rus', sterlet caviar was highly valued. Even today, many gourmets prefer sterlet caviar, admiring its delicate, refined taste with a piquant mushroom note and a “flying” aftertaste. Sommeliers detect hints of hazelnut and fresh avocado sweetness in the taste. Sterlet is the smallest fish of the sturgeon family (up to 3 kg). Its eggs, a noble platinum shade, are smaller in size (1-1.5 mm) compared to the caviar of other sturgeon species. Sterlet caviar is less fatty than sturgeon or beluga caviar.
